Our blackberry soda is made with Chester Blackberries, grown in Gaston, Oregon, at Ayers Creek Farm. The Chester berry has a very clean flavor. Blackberry is among our absolute favorite flavors for its exceptional pairings with vanilla ice cream and vodka. Seriously, HOTLIPS Blackberry Soda attracts the attention of hardcore fans and soda fanatics because it is the soda with the most variation from batch to batch—the fruit changes that much during a single season, and then from season to season.

Chesters ripen later than most cultivated blackberries, in early August, and continues until cool, damp autumn weather prevents the sugars from developing. The flavor intensifies as the season progresses and the nights become cooler. The variety does not lend itself to machine picking, which limits its popularity with large-scale commercial growers.

Ayers Creek practices organic field management to bring out the best qualities of the fruit. The field is drip irrigated so each plant receives the correct amount of water without waste. To ensure complete pollination of each flower, extra beehives are rented to do the job! Large berries are the result of good weather during the bloom period and lots of busy, healthy bees.

    It reminds me of every time I have gone mountain climbing and rock climbing. I am always eating wild blackberries. Now I take my 4-year-old grandson kayaking near Governor’s Island and we always eat blackberries.

    My grandson loves the blackberry soda best too.
